4 COZY PORRIDGE RECIPES

Christmas and New Year’s Eve came and went in a heartbeat, but the cold weather will remain with us for another few months. To combat the chill I layer up with thick knitted sweaters, light a dozen candles in my room, and warm myself up with several bowls of porridge. Here are four recipes that have been getting me through the day since November.

Chia & Cinnamon Apple Porridge

 

Serves 2

Ingredients:

2 dl oats

4 dl water

2 pinches of salt

1 tsp chia seeds

1 tsp seeds (pumpkin, sesame, linseed)

1 apple (¾ chopped in small pieces, ¼ sliced thinly)

Instructions:

Place the chopped pieces of apple in simmering water to soften them before adding them to the porridge. Bring the oats, water, salt, chia and seeds to a boil and let simmer until thickened. When the pieces of apple are soft, add them to the porridge. Top with cinnamon, apple slices, milk and honey.

Blueberry & Nut Butter Porridge

 

Serves 2

Ingredients:

2 dl oats

4 dl water

2 pinches of salt

2 handfuls of blueberries (fresh or frozen)

Instructions:

Bring oats, water and salt to a boil and let simmer. Once the porridge is almost at the right consistency, add the blueberries and let simmer for another minute. Serve with more blueberries, banana and nut butter of choice.

Nutty Almond Porridge

 

Serves 2

Ingredients:

2 dl oats

4 dl water

2 pinches of salt

1 handful of almonds

2 tsp almond butter

Instructions:

Bring oats, water, salt and almonds to a boil and let simmer until thickened. Before serving, add two teaspoons of almond butter to the porridge and swirl until melted. Serve with banana, cinnamon, nuts & seeds. I also added some homemade hazelnut & chocolate butter as an extra luxury.

Coconut Porridge

 

Serves 2

Ingredients:

2 dl oats

1 dl coconut milk

3 dl water

2 pinches of salt

Instructions:

Bring oats, coconut milk, water and salt to a boil and let simmer until thickened. Top with matcha powder, desiccated coconut and fruit of choice. I also topped mine with cinnamon (the flavor pairing might be debatable, but I tend to add cinnamon to every kind of porridge).
